Summer Salad - Greek Tomato

If you can't take the heat - stay out of the kitchen! But night after night of eating out isn't cool either... That's why I enjoy a yummy summer salad for dinner! This "Greek Tomato" reminds me of something my Nonno used to say: " We eat with our eyes". It's pretty, it makes use of seasonal produce, it doesn't require an oven! Perfect hot weather fare... Thank you for the inspiration Jacques Pepin!
 Dressing:     - juice of one lemon
              - 1/4 c. olive oil
             - fresh oregano
       - fresh mint
                        - salt & pepper to taste
              "Tomato":      - feta cheese (4 slices + extra for garnish)
 - red onion (4 slices)                                                        
                                                           - two tomatoes (leave stem intact if possible for prettier presentation, cut tomato into 5 slices, cutting around stem so that it can be removed after presentation)
 Whisk olive oil into lemon juice, then season. Don't forget the all important fresh herbs!
Alternate feta and onion between slices of tomato, beginning with tomato slice. Remember, you are going to re-assemble the tomato so that the finished product looks exactly like a big tomato! Drizzle dressing between slices.
Garnish with olives and crumbled feta, drizzle with more dressing et voila! 
A nice crusty baguette and a glass of chilled rose are the perfect accompaniment...
or
 Make multiples and bring them to a pot luck or bar-be-que!
